Chipotle Refried Beans

Refried Beans are a very popular dish here in Mexico, used as an appetizer ad it also goes with every meal.

They are easy to make, and all you need are the next ingredients:

1/2 kg (1lb) of beans

2 lt of water

1/2 onion

1 clove of garlic

fresh epazote leaves

corn oil

chipotle chiles

salt & pepper

Put the beans in a pressure cooker with water, add the epazote, the onion and the garlic. Then season with salt & pepper. Boil for about an hour until they are perfectly cooked, they have to be soft. Mash the beans and fry them in a hot corn oil. blend the chipotle chiles and add them to the beans.

Serves 6

Creamy Guacamole

Creamy Guacamole

This is a variation of the traditional guacamole, it is creamier and blended an is used as a salsa in Mexican Taquerias.

It is very easy to make, and all you need are the next ingredients:

2 avocados
1 small onion
2 serrano chiles
fresh cilantro leaves
juice of 1 lime
1/2 coup sour cream
salt

Cut the avocados, the onion and the chiles in cubes. Blend them with the cream and the cilantro. Add the juice of the lime and a bit of salt. Blend a little more.

Serves 4

Guacamole

Guacamole is used in Mexico as an appetizer and it goes with almost every meal.

It is very easy to make, and all you need are the next ingredients:

2 avocados
1 small onion
1 large tomato
2 serrano chiles
fresh cilantro leaves
juice of 1 lime
salt

Mash the avocados until they are soft. Finely chop the onion, the tomato, the chiles and the cilantro leaves. Mix them with the avocado. Add the juice of the lime and season with a bit of salt.

serves 4.

Pico de Gallo

Pico de GaloPico de Gallo is commonly used in Mexico as an appetizer. It is a type of salsa that you can use to eat with chips.

It is very easy to make, and all you need are the next ingredients…

2 large tomatoes

1 large onion

2 serrano chiles (green chiles)

juice of one lime

olive oil

fresh coriander leaves (cilantro)

salt & pepper

Finely chop the tomatoes, the onion, the chiles and the cilantro. Mix all ingredients in a bowl. Add the juice of a lime and the olive oil. Season with a little bit of salt and pepper.
